Scientific name: Hypsizygus tessulatus
Substrate Preference:
Best Substrates: Sawdust, hardwood chips, and enriched compost.
Growing Conditions: Optimal fruiting temperatures are between 10-18°C (50-65°F). Shimeji mushrooms need cooler conditions compared to some other varieties.
Cultivation Tips:
Incubation: The mycelium colonizes the substrate in 2-4 weeks under cool and dark conditions.
Fruiting: Expose to low light, and maintain humidity between 85-90%. They require good airflow to avoid stem elongation.
Harvesting: Harvest when clusters are tight, and before the caps fully open.
